Poached Eggs with Yogurt and Hot Red Pepper Sizzle
Moroccan Fish Tagine with Tomatoes, Olives, and Preserved Lemons
Chicken with Red Wine Vinegar, Tomato, and Shallots

From Publishers Weekly
Starred Review. Beginning with a simple premise—Food tastes better cooked in clay—this single-themed cookbook is an illuminating treatise on a technique that's used throughout the Mediterranean but is still relatively obscure in U.S. kitchens. James Beard Award–winner Wolfert (The Slow Mediterranean Kitchen; The Cooking of Southwest France), who has studied and written about the region's cuisine for decades, has become passionate about earthenware pots. Wolfert claims that all food cooked in unglazed vessels has an earthy sweetness, and that when the vessel is dedicated to a certain food, its porous surface gains a seasoning or memory that enhances the flavor. Because these same characteristics make clay pots tricky to care for, Wolfert provides tips for cleaning and safety as well as plenty of sources for more information. What these dishes have in common is that they can be prepared, baked and brought to the table in their respective dishes—be it in the Spanish cazeula (orange-glazed pork belly), the Moroccan tagine (fish tagine with tomatoes, olives and preserved lemon) or the Turkish guvec (summer lamb and vegetable guvec). Wolfert is a true cook's author, and as her use of obscure ingredients (dried eggplant, sweet and sour plums, argan oil) and colorful anecdotes/additional ideas (say, grilling over a flowerpot) illustrate, this book is not for the casual home cook. But for those willing to tackle them, Wolfert's clay pot dishes do indeed merit the hype. Photos. (Oct.)

Hooked on Wolfert
By Francois
This is my third book by Paula Wolfert. I intend to get all of them. Her books are not just full of recipes, but also contain relevant background information and insights into other cultures. I'm especially interested in learning more about cooking in clay. So this is the perfect book for me. In addition to the material in the book, you'll find more information about Paula's methods on eGullet's forums. I came across a thread on tagines and another on how to cure claypots. Paula contributed to both threads. Her knowledge, enthusiasm, and curiosity are amazing. It also speaks well of her how she encourages others on the forums. Clearly, a very neat lady.

Now the warning: you may end up with a house full of a new class of toys. So far I've accumulated a Chinese sandpot (which I cracked making a Wolfert recipe and successfully repaired using Paula's instructions), four different tagines, an Emile Henry Flame Top dutch oven, two Roemertopf's, a Japanese donabe, a Spanish Cazuela, and a Baeckeoffe oval tureen from Alsace. Regrettably, I'm not done yet. I still want to get some Black Chamba Clay Cookware and perhaps a daubière... unless my wife puts me out of my misery first.

Update (1-21-2010):
I've made numerous recipes from the book by now: Moroccan Fish Tagine with Tomatoes, Olives, and Preserved Lemons (for which I bought an inexpensive Rifi Tagra), Fried Spatchcocked Chicken (made in an Italian mattone), Moroccan Chicken Tagine with Sweet Onions and Raisins, Baked Moroccan Chicken with Charred Tomatoes, Moroccan Lamb Tagine with Winter Squash and Toasted Pine Nuts, etc. , etc. They were fun to make and tasted wonderful. Some recipes are easy to make and some require patience and dedication. There's a thread on eGullet that deals with cooking from this book. Its title is Cooking with Paula Wolfert's "Mediterranean Clay Pot Cooking" You'll find some pictures, experiences, and hints on this thread, should you need help. Paula contributes here as well.

Update (2-17-2010):
I'm still happy with this book and I'm cooking at least one new recipe from it per week. My two recent favorites were "Chicken with Red Wine Vinegar, Tomato, and Shallots" and "White Beans with Tomatoes and Sage." The latter required making the beans before, according to another recipe: "Tuscan White Beans with Sage and Garlic." The beans were just terrific with the tomatoes and sage. It was an instant favorite for us while it was also one of the easiest recipes to make. I used my Chamba bean pot for this dish. (It's winter now in Colorado and it feels nice to put one's cold hands on the warm lid of the Chamba while inhaling the wonderful aromas escaping from the pot.) I'm completely sold on cooking in clay, thanks to Ms. Wolfert. Her book serves as an instruction manual on how to utilize the various clay pots available by providing the recipes that are best made in these pots. Months after I bought the book, I still have clay pots coming in on a regular basis--not that I *must* have them, but because I'm hooked. (Paula says in her book that 75% of the recipes can be made in just six different pots.) I'm also a fan of Ms. Wolfert's style of presenting information, which is not at all dry. As of today, I own all of her books.

Clay Pot Cookbook Review
By Egyptian Swede
The book needed more editing. I have made two recipes from it and both had errors. One called for olives in the list of ingredients but failed to mention when to add the olives. Another said to heat the oven to 400 degrees and then never used the oven.

I would also like a picture of the different pots. The recipes call for so many different types of pots and I have no idea about the shape of some of them.

The Flavor Explosion Cookbook
By Thomas D. Wirt
Paula Wolfert's new book, "Mediterranean Clay Pot Cooking" will end up being a seminal work for the new - old way of cooking, in clay pots. There are the old style pots of mica rich natural clays, and the new high tech flameware ceramic stovetop cookware by people such as Bill Sax, Terry Silverman, Emile Henry and the Clay Coyote Pottery.

Clay Pot cooking seems as though it's becoming the third leg of the natural and local foods nutritional stool. As Paula points out, food simply tastes better when cooked in clay. When you combine it with local, fresh foods, your eating will move to a new level.

Paula has approached this book with her usual masterful presentation of authentic recipes from Morocco, France, Italy, Greece and more, but made them more approachable by adding alternative ingredients and alternate cooking methods for different pots. You can cook these dishes in the usual metal cookware, but if you go the extra step and find some clay pots or flameware pottery, you'll find out what I mean when I say these are "flavor explosion" recipes. It is no wonder a number of top lists have made this the number one cookbook for 2009.

Amazon.com Review
During her 23-year professional tennis career, Betsy Nagelsen beat Chris Evert, Martina Navratilova, and Pam Shriver on the court, and now she's beating the clock with a no-nonsense approach to fitness over 40. Presented in the classic For Dummies series style--simple language and easy-to-read pages peppered with icons, cartoons, and lots of sidebars to break up the 28 chapters in this 330-page book--Fit over 40 increases the most lethargic mouse potato's (the term for computer-age slouches) understanding of the aging process, while offering a practical game plan for "turning back the hands of your body clock."

Described by Monica Seles as "one of the fittest people I know," Nagelson McCormack is respected in the athletic community for her dogged devotion to keeping fit, and, with the help of veteran health writer Mike Yorkey, she inspires readers to follow suit in an entertaining, informative, and collegial way. As this U.S. Open Senior Women's Doubles Champ educates you about metabolism (once it slows, you'll automatically gain a pound or two a year unless you exercise), the three pillars of fitness (cardiovascular exercise, strength training, and stretching), the fundamentals of good nutrition, choosing the right exercise program, and even tips for checking out a gym, you'll feel as if you're getting the skinny from an informed friend.

Filled with black-and-white photographs of Nagelson McCormack exercising, Fit over 40 is designed for busy people (indeed, she advises readers to initially commit to a workout that's just five minutes long) who want to skip between chapters and absorb vast amounts of information quickly. To liven things up, you'll even find sidebars on soccer star Brandi Chastain's sports bra, a critique of fitness magazines and Web sites, and a list of inspiring fitness movies. --Deborah Geigis Berry

Pretty good advice, it seems.
By S. M. Ferguson
I'm a 45 year old overweight male whose primary exercise over the past decade has been to push my PC's mouse. High cholesterol, achy joints, and bouts of depression have impelled me into taking action. One component of my program is going to a gym to lift weights and do aerobic activity. I'm finding Betsy's book extremely helpful, because she speaks directly to my needs and my situation. (If I was an athlete, would I be looking for a book like this?)
She is both positive and realistic in her approach. For example, she suggests that rather than planning to exercise three or four days a week, you should plan to do it every day. She reasons that if you miss two days on a seven-day schedule, you're still exercising for 5 days, and that's good. By contrast, if you miss two days on a three-day schedule, you've only exercised once during the week, and that's useless. Huh, who'da thunk it.
If you're over 40, sedentary, and feeling the need to get into better shape, I most definitely recommend this book.

Speaks to all levels.
By Eric A. Oertell
I am a former athlete that my 20s and 30s that got the best of me. Now 50 pounds heavier, with high blood pressure and lower engery levels I want to make a change. What I liked best was how this book was an easy read the first night read over 50 pages. The key fundemental that was repeated was get up and do something constintantly even if its taking a walk for 15 minutes for 3 times a week and then increase steadily. This book also gives people a little embrassed about getting back to the gym.

For absolute beginner dummies only
By Hermes
I'm a bit disappointed with this book. It seems to be aimed at people who wouldn't recognize an exercise bike if they bumped into it. After 40, most people train for health rather than aesthetic amusement. So I was surprised to see some potentially injurious exercises demonstrated. (Maybe that's why the author has had seven knee surgeries.) Although she never claims to know what she is talking about. Perhaps she should have written a book on tennis.

Beginners book, it is NOT
By B. Kelly
I bought this book expecting that it would be a beginners book, in that it would start you off with some basics and move on from there. I also expected that due to to its size and content, it would be an adequate reference when I progressed beyond the basics. I expected this to be a fairly "easy read" since I have substantial backgroud programming in ASP. Unfortunately, the book is fairly disorganized and cotains a fair amount of technical rambling. Definitely more confusing more than educational.

In essence, I consider this more of a reference manual than the learning book that I had hoped for and I will be buying another beginners book.

Truly for professionals by professionals, but excellent for students as well
By PMcD
This book is not a click-here teach yourself book. IT professionals know that learning a new area of technology takes effort on their part and requires that they apply prior knowledge to gain new knowledge. At the pro level, we don't spoon-feed you! So yes, you will have to dig into the book's code samples and experiment with them. Having said that, however, this book does a great job of explaining its code samples line by line. As noted by other reviewers, the depth of this book exceeds most other books on JSP. IT professionals know and love WROX as one of the very best publishers of books for professionals.

I have used this book to teach JSP at university level multiple times. The student who is willing to roll up his/her sleeves and dig in soon realizes that this is one of the few books that will be kept once the degree is earned. This book allows me to cover past and present JSP methodologies. Learning past methodologies is critical, as you will find millions of lines of past approach code still in use in the real world, and may even need to convert some of it. My students get hired when they finish this course because of this.

Every time I teach JSP, I look for a new textbook or professional book to replace this book. So far, I have not found anything that comes close to the breadth and depth of this book. I'll be using this book again soon.

JSP is not a simple technology, but it is a powerful one consisting of many approaches and supporting many add-on technologies. You MUST be solid in your knowledge of Java and object-oriented programming. If you are not, you are not ready for JSP, period, no matter which book you use.

Excellent JSP reference with solid software engineering
By David Williams
This is a hefty tome weighing in at 1262 pages. Wrox have a sound reputation for producing excellent programming titles, for programmers by programmers, and this latest offering does not disappoint.

From the onset, it is clearly an outstanding work with a solid emphasis on writing code properly. The book has lucid sections devoted to design patterns, testing, model-view architectures and many other important considerations in good software engineering. This is not just a "sequence, selection, repetition" work but one which distills obvious years of experience. Any reader can have confidence they will be not just a JavaServer Page (JSP) code cutter after finishing, but a good, professional, developer with a mastery of principles than transgress language boundaries.

The book is divided into four broad sections. Part one covers JSP fundamentals. Part two builds on this putting the JSP language knowledge into the framework of modern Web server software development, including coverage of servlets, security, performance and database integration. Part three puts it all together and shows how to build two complete real-world applications: a personalised portal, and an updateable, data-driven shopping cart site. Part IV concludes with appendices and exercise answers.

The book is not simply a standalone volume; Wrox have a hierarchy of Java titles which progress from beginning Java and JavaServer Pages through to advanced J2EE development. That said, this book can be entirely appreciated on its own and is comprehensive and complete in its coverage of JSP. It does not make any assumption of previous programming experience, but at the same time does not bog experienced programmers down with basic fundamentals.

The price is surprisingly reasonable for a book of this quality and size and consequently it is an indispensable purchase for anyone who wishes to develop server-side JSP apps.

This is a Very Useful, Easy-to-read Book!
By J. Bean
I have the rarest form of breast cancer, which often appears within weeks of a normal mammogram. Mine did: 7 weeks after a perfectly normal mammogram. It is a invasive and aggressive cancer. Before chemo started, I didn't have much time to adjust the whole idea of having cancer. That's where "Chemo & Radiation"' sowed its value. I'd no idea of hoe chemo worked nor what its side effects were likely to be. This book gave a basic idea of the workings of chemo, the various side effects that were typical and so on. Unlike most breast cancers my type is treated by at least 16 sessions of chemo before surgery. That's a lot: I experienced side effect such a chemo fog, which is quite scary. Had I not had access to "Chemo & Radiation," I'd have totally unprepared for such side effect. It was hard enough to deal with having cancer, without help with becoming aware of the side effects, I'd have been a real mess. "Chemo & Radiation" allowed me to control my panic and to fight the side effects. In what's a nightmare, this book has been something I can lean on. For me, it has been a very useful tool in dealing with the nightmares. It doesn't get much better than that!

A Best Friend for Cancer Patients
By Pat Schneider
"Chemotherapy & Radiation for Dummies" is exactly what I need in understanding my own early diagnosis of cancer. The text is informed by superb medical writers but for me the great gift is the voice of cancer survivor Patricia Corrigan, whose wit and wisdom is legendary in the St. Louis Post Dispatch. Written with compassion and just the right touch here and there of humor, this book sits on my shelf as my number one guide for my own journey with cancer. Mixed in with exact information about what to expect are resources for staying sane, such as a Web Site called "Tumor Humor" that "offers cancer-related jokes and discusses the many physiological benefits of laughter." The book is serious, practical, and full of things I would never have thought of if left to myself. And it is organized so even "a dummy" like me can find my way to anything I need to know. Bravo! Bravo!

Even though Cancer is not a DUMMIE'S thing....
By S. M. Olivas
I found this book easy to understand. I purchased this book for my mom who was barely starting chemo. Between feeling sick and constantly at the hospital for treatments, reading any long lengthy information on cancer was the last thing my mom wanted to do. With the DUMMIES books, it was very easy for her and our family to retain the necessary info. Over the years I have purchased many DUMMIES books and I still use them to this day. We are a DUMMIES Lover Family.

Great, Easy, Portable , and Fast. to make and eat.
By Be Lee
Ok, I can't really cook, and I really don't have time to try either. I've been looking for years for a cookbook with brain dead recipes that is cheap, easy to make, and most important to me, easy to carry. I'm a very busy person and needs to muti-task between work and school. I heard about Bisquick for years but never used it. I bought this book, sight unseen, because I thought it sounded too good to be true on how easy it is, that I would just give it a shot. This is the best book I ever got for realist recipes that I can make. I baked the Cheeseburger Pie, while I was cleaning my apt and doing homework. 25 mins in the oven, it came out great. With the leftovers, I reheated it in the microwave and it came out good. This is a great book to give to somebody who can't or has very limited skills cooking or a college student, who has access to a oven or a toaster oven that can bake. If you want to make it a gift theme, give them the book, a pie pan, and a box of Bisquick. I can not wait till have I the chance to try out the other recipes but the best thing is that each recipe comes with a calorie count for each slice.

Magical Crust Based Charmers
By rodboomboom
This began in 1978 with Bisquick's recipe for crustless pie recipes and it sprang into a following which shared recipes and menus around this concept. Here are collection of recipes shared over the years in newsletters, all featuring the "Impossible Easy" concept and utilizing readily available and easy to use ingredients such as milk, eggs, cheese, etc.

There are probably 100 of these recipes so easy to make and delicious to serve and enjoy. Feast your menus on such as: Mexican Fiesta Pie, Chicken Tamale Pie, Turkey Ranch Pie,Sausage and Cheese Pie, Shrimp and Spinach Quiche Pie,Mixed Berry Crumble Pie, Peaches n' Cream Pie,Fudgy Chocolate Pecan Pie, Butterscoth Pecan Pie.

These are all easy to prepare, and would be ideal moments to partner up with your children to cook these together.

There is wonderful history and Q&A section, as well as some great color photos and menu suggestions.

I this was my gift at a "Stock the Pantry" bridal shower along with a box of Bisquick. We were to give a recipe to the bride and I gave her a whole book with tabs and notes from my years of making Impossible Pies.

Solid Business Change Fundamentals
By Earl Beede
While I have never like the word "dummies" in the series title, I have liked the format and the content. Managing Business Change met my expectations. Typical of this format, it is more broad than deep. However, I appreciate the attention given to resistance. Helpful tips and checklists will make sure you are not completely in the dark when it comes to leading change.

The main drawback I found was the fifth section titled "Taking Care of Yourself" where the authors put for topics on meditation and yoga. Not what I wanted out of the book but easy enough to skip over.

I recommend this book to those who are dealing with minor changes on a daily basis. Mid to lower level managers will benefit most. Higher up on the chain would probably benefit more from Kaplan's work.

Three stars only because the book is out of print and could use a revision.
By nasalhazel
Straightforward discussion of managing business change -- but focuses on the role of the leaders to manage the change -- would have been good to give more attention to the fact that leaders don't really know what they are doing (especially when it is not a planned re-org, but a forced downsizing), and stress we are all responsible for managing change in the workplace. Good intro discussion of the emotional and psychological aspects of business change, which I am sadly witnessing every day at my own job.

Don't judge this book by its cover.

Finally I found a book that shows me how to lead successful change in my department. No longer does resistance sabotage my chance efforts. Now I know how to make resistance work for me. I keep a copy handy on my desk. Don't let this cover fool you - this is no book for dummies.
